Ingredients
- 1 lb. pork or chicken, diced
- 1 onion, finely chopped
- 2 bell peppers, diced
- 2 tomatoes, diced
- 2 cloves garlic, minced
- ¼ cup vegetable oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley, for garnish
Preparation Method
- Begin by seasoning the diced meat with salt, pepper, paprika, and cumin.
- In a large pan or skillet, heat the vegetable oil over medium-high heat. Add the seasoned meat and brown it on all sides. Once browned, remove it from the pan and set aside.
- In the same pan, add more oil if necessary and sauté the chopped onion until it becomes translucent.
- Add the diced bell peppers and cook until they have slightly softened. Stir in the minced garlic and cook for one more minute until fragrant.
- Return the browned meat to the pan. Add the diced tomatoes and mix everything together well.
- Lower the heat, cover the pan, and let it simmer for 20-30 minutes, or until the meat is fully cooked and the flavors have melded together.
- Adjust the seasoning with salt and pepper to your taste. Garnish with chopped fresh parsley just before serving.
