Ingredients

  • 1 lb. pork or chicken, diced
  • 1 onion, finely chopped
  • 2 bell peppers, diced
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • ¼ cup vegetable oil
  • 1 teaspoon paprika

Preparation Method

  1. Begin by seasoning the diced meat with salt, pepper, paprika, and cumin.

  4. Add the diced bell peppers and cook until they have slightly softened. Stir in the minced garlic and cook for one more minute until fragrant.
  5. Return the browned meat to the pan. Add the diced tomatoes and mix everything together well.
  6. Lower the heat, cover the pan, and let it simmer for 20-30 minutes, or until the meat is fully cooked and the flavors have melded together.
  7. Adjust the seasoning with salt and pepper to your taste. Garnish with chopped fresh parsley just before serving.
