Chipotle Beef Tortilla Pies Recipe

Ingredients

  • Filling:
    • 1 onion, finely chopped
    • 3 cloves garlic, crushed
    • 500g lean beef mince
    • 1 tbsp plain flour
    • 2 tbsp Mexican spice mix
    • ¾ cup medium salsa
    • 2 tbsp chipotle in adobo sauce
    • ½ cup chopped fresh coriander, plus leaves to garnish
  • Assembly:
    • 3 sheets frozen puff pastry, just thawed
    • 1 cup grated cheddar cheese
    • 3 mini taco tortillas (15cm)
    • Guacamole, sriracha hot chilli sauce, and lime wedges, to serve

Method

  1. Sauté and Brown: Heat a small amount of oil in a large, non-stick frying pan over medium-high heat. Add the onion and garlic, cooking and stirring for 3 minutes until the onion has softened. Add the lean beef mince and cook, breaking it up with a spoon, for 5-8 minutes until browned. Stir in the plain flour and Mexican spice mix and cook for one minute more.
  2. Simmer the Filling: Add the salsa, chipotle in adobo sauce, and ¾ cup of water to the pan. Bring the mixture to a boil. Reduce the heat and allow it to gently boil, stirring occasionally, for 3 minutes or until the sauce has thickened. Remove from the heat and stir in the chopped fresh coriander. Transfer to a large heatproof bowl to cool slightly.
  3. Prepare Pastry and Tortillas: Using a pie maker cutter, cut 12 large rounds (10.5cm) from the puff pastry sheets.
  4. Assemble the Pies: Spray a 4-hole pie maker (⅓-cup capacity) with oil and preheat. Press four pastry rounds into the holes. Spoon a ¼ cup of the beef filling into each case and sprinkle generously with the grated cheddar cheese. Cut each mini tortilla into six wedges. Arrange two tortilla wedges over the cheese on each pie. Close the lid.
  5. Cook: Cook for approximately 8-10 minutes, or until the pastry is golden and the tortilla tops are crisp. Remove the pies. Repeat with the remaining pastry rounds, filling, cheese, and tortilla wedges to make a total of 12 pies.
  6. Serve: Serve the pies immediately with sides of guacamole, sriracha, and fresh lime wedges. Garnish with extra coriander leaves.
