    • 6 large (1.2kg) Granny Smith apples
    • ¼ cup firmly packed brown sugar
    • ½ tsp ground cinnamon
  • Crumble Topping:
    • 1 cup plain flour
    • ½ cup firmly packed brown sugar
    • 85g cold butter, chopped
    • ½ cup rolled oats
    • ⅓ cup shredded coconut
  • To Serve:
    • Vanilla ice-cream

Method

  1. Prepare the Apples: Peel, core, and slice the apples. Place them in a deep, 8-cup capacity ovenproof dish. Combine the apples with ¼ cup of brown sugar, cinnamon, and 1 tablespoon of water. Stir well to coat.
  2. Pre-cook the Filling: Cover the dish and bake in a preheated oven at 180°C (160°C fan-forced) for 8-10 minutes, or until the apples are just beginning to soften. This step ensures the apples are perfectly tender in the final bake.
  3. Make the Crumble Topping: While the apples are in the oven, combine the plain flour and the remaining ½ cup of brown sugar in a medium bowl. Add the cold, chopped butter.
